Another Italian mid-week dish idea for you …
Breast chicken, sliced and breaded (I add all my spices to the eggs . Herbs, salt and pepper) shallow fried in a pan.
New potatoes sliced in half with sweet paprica, olive oil salt, pepper and origano (if you put them in a zip lock bag you can prepare them in advance and leave them to marinade in the fridge) cook for 25 minutes. I did mine in the air frier.
If you are vegetarian you can use aubergines or courgette instead of chicken!
Ps I’m not a chef or an expert, but I know how bloody frustrating it is to come up with something different for dinner
